Keto Apple Crisp

October 31, 2019 By faith 1 Comment

This Keto Apple Crisp has a sweet, juicy, and aromatic cinnamon-spiced apple filling, topped with a nutty crumble topping. It’s the stuff your fall dessert dreams are made of! (Spoiler Alert: There are no apples in sight; read on to see my secret ingredient!)

I’m an apple girl through-and-through, and I’m a little picky about my apples. (I blame the fact that New York’s amazing apples spoiled me from the beginning, lol!) I love a sweet/tart crisp apple eaten out-of-hand, sliced into a green salad, added to homemade breakfast sausage, and as the star of the show in a savory chicken dish….

If you can’t decide between chocolate, peanut butter, and cheesecake, now you don’t have to! These rich, fudgy chocolate brownies are laced with a hint of peanut butter, and then topped with rich and creamy no-bake peanut butter cheesecake.

Back in the day (before I started eating low carb, lol), Adam’s Peanut Butter Cup Fudge Ripple Cheesecake from The Cheesecake Factory was one of my favorite desserts. It was my go-to dessert there; after trying it, I don’t think I ever ordered a different kind of cheesecake! But after going low carb, it was of course out the window….

Almond Butter Brownies

May 23, 2019 By faith 2 Comments

Almond Butter Brownies are rich, fudgy, and deeply chocolatey! You’ll be surprised that the batter has half a cup of almond butter because you can’t taste it. Each brownie has just 2g net carbs per serving!

I’ve experimented with almond butter-based brownies more times than I can remember! Either they ended up with the wrong flavor (too much like almond and not enough like chocolate), or the wrong texture (there is no place for rubbery brownies, cakey brownies, or cardboard-y brownies in my world)….

Keto Carrot Cake is richly spiced with a moist crumb, just the right amount of carrot, and a luscious cream cheese frosting to top it off.

It’s the cutest thing; my grandma went keto about a year ago (her doctor recommended it for medical reasons). After that, every time I head up to Buffalo to visit family, she tells me that she’s dying for Keto Carrot Cake. Well, on my next trip to Buffalo I won’t be going empty-handed. Grandma, this one is for you (xoxo!)….

These Gluten Free Date Bars with Almonds and Oats (Vegan) are nutty and sweet with subtle notes of caramel and a hint of vanilla.

Stack of Gluten Free Almond Oat Date Crumb Bars (Vegan)

I recently found a huge bag of dates tucked into the back of my pantry. I’m not one to waste food if I can help it, and I wanted to find a way to use them. Crumb bars came to mind! Dates make a delicious filling for crumb bars because they’re naturally sweet and have subtle notes of caramel. Plus, dates are packed with fiber and are a good source of vitamins and minerals. Cinnamon is the perfect spice to accentuate the flavor profile and pull everything together in my Gluten Free Date Bars with Almonds and Oats….

Chocolate Rum Balls (Small Batch; Gluten Free)

December 20, 2018 By faith 1 Comment

Chocolate Rum Balls (Small Batch; Gluten Free) are the perfect sweet treat to bring to your next holiday party! Or keep them stashed in your fridge throughout the holiday season for those times when a craving strikes and you want something that’s decadent without being too indulgent; these have just 2g net carbs per truffle!

Front View of Low Carb Chocolate Rum Balls (Small Batch; Gluten Free)

Chocolate Rum Balls are a Christmas party classic. I remember going to endless holiday gatherings as a kid and they all had these little boozy-smelling chocolate bites. At first bite you might think it’s an odd flavor pairing, but rum actually brings out the flavor nuances in chocolate. These candies taste like a cross between brownie bites and fudge, in the shape of truffles. They get even better the day after making them, as the different flavors have the chance to blend….

Have you had Molasses Crinkles? They’re warm-spiced dark brown cookies with rich notes of caramel, thanks to the use of molasses. Growing up, my mom made them in the fall, and they always seem so festive to me! These Chewy Molasses Cookies are a low carb version of Molasses Crinkles. They’re perfect for a festive holiday cookie tray, or lovely anytime you want to do some autumnal baking. The best part is that this recipe makes just eight cookies so you won’t be stuck with a ton of leftover cookies; or you can easily double or triple the recipe if you’re feeding a crowd….

Pelmeni are Russian meat dumplings frequently serv Pelmeni are Russian meat dumplings frequently served with a dollop of sour cream and a sprinkling of fresh dill. You can boil or fry them, they freeze like a dream (and they cook directly from frozen!), and they make a big batch so you’ll have a freezer stash of easy dinners for busy nights. But fair warning, these are definitely a labor of love. I made them last spring on a Zoom call with ma chérie Evelyne of @cultureatz that involved ridiculous amounts of laughter, and the shenanigans of us hand making about 100 dumplings each! I’m definitely a bad blogger for not sharing the recipe until now lol. But it’s (finally!) up and you can check it out on @anediblemosaic 🥰 —> https://www.anediblemosaic.com/pelmeni-recipe-russian-dumplings/ #dumplings #dumplingsfordays #russianfood #pelmeni #foodstyling #foodstylist #foodphotography #photography #moodygrams #lightandshadow
The other day Dan and I were at an antique store a The other day Dan and I were at an antique store and we happened to find one of the vendors who was putting out #vintage #valentinesday cards she had found in one of her storage units. 💌 These are from the 1930s/1940s! She was a third generation antique dealer and she said she still has several full rooms to sort through! (I love the treasure hunt of that, it’s like exploring in your grandparents’ attic.) Anyway, I had to buy a couple cards because they’re completely charming. #happyvalentinesday, lovelies. 🥰 #valentines #romantic #flatlay #valentinesmood #vintageprops #propstyling #propstylist #photography
#ad If you’re looking for a romantic meal to mak #ad If you’re looking for a romantic meal to make for your sweetheart for Valentine’s Day this weekend, you’ve come to the right place! This meal is easy, fast (no one will guess it whips up in less than 15 minutes!), and impressive. And soooo good. 🥰

What’s on the menu? Pan seared chicken in a savory cream sauce. Steamed green beans. And Fresh Blends Ready to Cook Idaho Potatoes!

Let’s talk sides first. Steamed green beans are easy, and they round out the meal well. Or you could go with broccoli if you want.

The real star of the side dish show are these flavorful @eagleeyeproduce potatoes! They’re family grown in Idaho. Fresh-cut, never cooked, never frozen, with no preservatives. And they cook up easily with a one-step cooking process (just 8 minutes in the microwave, or you can do them on the stovetop to get them crispy). Check out their website to find their store locator to see where they’re available near you --> https://eagleeyeproduce.com/store-locator/

And now the chicken! Inspired by the famous “Marry Me Chicken”, this recipe checks all the right boxes and has all the bells and whistles. Chicken cutlets cook up quick on the stovetop, and then a luscious cream sauce flavored with garlic, fresh herbs, and sundried tomatoes cooks in the same skillet. Take a look at the recipe in the comments below.

This small batch recipe of Red Velvet Cupcakes is This small batch recipe of Red Velvet Cupcakes is the perfect dessert for you and your sweetheart this Valentine's Day, and it's even more special because it was made for a cause. ❤️

This is the 5th year in a row that Julie from @thelittlekitchn has organized the Cookies for Kid's Cancer Valentine's Event to raise money and awareness for childhood cancer, and I'm honored to be part of it.

Cancer is the top cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. And the National Cancer Institute’s budget for childhood cancer is less than 4%.⁣

You can help make a difference by donating to @cookies4kids. Our goal is to raise at least $3000. Thank you to @OXO, @Mediavine and @Dixie_Crystals who have each pledged to match our donations raised through this campaign up to $3000!⁣
