For my fellow #harrypotter fans 🤓⚡️ I played around and came up with this keto #treacletart recipe last weekend. It’s a fun and easy recipe if you’re in the mood for a little fall baking this weekend! 🥧

🍁Keto Treacle Tart🍁

Yields 8 tarts
Prep Time: 20 minutes
Cook Time: 20 minutes

🍁For the Crust:
1/4 cup unsalted butter, at room temperature
2 tablespoons crystalized allulose
1 teaspoon vanilla
1/4 teaspoon salt
1 cup almond flour

🍁For the Syrup:
6 tablespoons water
1/2 cup crystalized allulose
1/8 teaspoon cream of tartar
1/8 teaspoon blackstrap molasses
1/8 teaspoon salt
1 teaspoon vanilla

🍁For the Filling:
All the of the syrup
2 tablespoons heavy whipping cream
1/2 cup almond flour, spread on a baking tray and toasted at 325F for 10 minutes

🍁For the Crust:

Beat together the butter, allulose, vanilla, and salt until smooth. Stir in the almond flour. Divide the dough into 8 equal parts, roll each into a ball, and place each dough ball into a muffin well in a muffin tray. Press the dough into the bottom and about 1 inch up the sides of each muffin well. Bake until light golden, about 7 to 8 minutes at 325F.

🍁For the Syrup:

Add all ingredients except the vanilla to a medium saucepan over medium heat. Cook until it boils, and then let it boil for 2 minutes, whisking constantly. Remove from the heat and whisk in the vanilla.

🍁For the Filling:

Once the syrup is made, whisk in the heavy whipping cream and toasted almond flour.

🍁To Assemble and Bake:

Spoon the filling into the pre-baked crust shells. Bake until the filling is set along the outside (it’s fine if it’s a little wet in the center), and the crust is golden, about 5 to 7 minutes at 325F.

This isn’t at all the vision I had for this cake, but it just sort of morphed into this and I kind of love the end result.
